  • Shiitake mushroom powder
  • Scallop powder
  • Seaweed Salmon Floss

How to Make Baby Chawanmushi

1. Crack the Egg
Crack one whole egg into a mixing bowl.

2. Add Warm Water
Add 50ml of warm water and mix gently.

💡 Tip: Warm water helps create a softer and smoother steamed egg texture.

3. Beat the Egg
Beat the egg mixture until well combined, but avoid creating too many bubbles.

4. Strain the Egg Mixture
Pour the egg mixture through a fine sieve into another bowl.

💡 Tip: Straining removes any clumps and helps create that super silky chawanmushi texture.

5. Add the Vegetables
Add the chopped broccoli and carrot into the egg mixture.

6. Add Food Powder
Add the shiitake mushroom powder and scallop powder. Stir gently until evenly combined.

7. Cover the Bowl
Cover the bowl with cling wrap to help prevent water droplets from falling onto the surface while steaming.

8. Steam Gently
Place the bowl into a steamer and steam for about 10 minutes.

9. Let It Rest
Turn off the heat and let the chawanmushi sit in the steamer for another 2 minutes.

10. Finish with Salmon Floss
Carefully remove the cling wrap and top with Seaweed Salmon Floss.
